Here
is another simple and quick filling. (see also
spinach and ricotta)
Very tasty. No cooking. for the filling:
Combine the parsley, the ricotta, the melted butter, the egg and salt and pepper thoroughly. Add the parmesan. Add enough parmesan so the mixture is like a paste, able to hold form when dropped on the pasta sheet. See how to make ravioli for the basic ravioli recipe. This is the filling. Excellent with a good tomato sauce.
