Here is another simple and quick filling. (see also spinach and ricotta) Very tasty. No cooking.

for the filling:

  • one cup ricotta
  • one-half cup chopped parsley
  • one tablespoon melted butter
  • one egg
  • one-half cup freshly grated parmesan
  • salt and pepper

Combine the parsley, the ricotta, the melted butter, the egg and salt and pepper thoroughly. Add the parmesan. Add enough parmesan so the mixture is like a paste, able to hold form when dropped on the pasta sheet.
